Blueberry Peach Crisp

For the Crisp

  • 6 peaches, thinly sliced

  • 1 pint blueberries

  • 1/2 lemon, juiced

  • 1.5 tbsp powdered sugar

  • 1.5 Tbsp all purpose flour


For the Topping

  • 1/3 cup brown sugar

  • 1/2 cup all purpose flour

  • 2/3 cup rolled oats

  • 4 Tbsp butter, cubed


Instructions

  1. In a large bowl, mix together all ingredients for the crisp.

  2. In a food processor add the brown sugar, flour & oats to mix together the ingredients but not too finely processed.

  3. In a separate bowl, mix the crisp topping with butter

  4. Pour crisp ingredients into a pie dish

  5. Sprinkle topping evenly over the top (Tip do not press down, evenly coat topping)

  6. Bake at 350 degrees for 50-60 minutes, or until bubbling and the top starts to brown

  7. Top with your favorite vanilla ice cream and enjoy!
