Butternut Squash Burrata Pasta

~1 lb linguine

~1 Burrata ball

~1 cup butternut squash, cubed

~6oz cherry tomatoes

~1/4 red onion, diced

~2 cloves garlic, minced

~olive oil


Boil pasta accordingly. Preheat oven to 350. To a Dutch oven drizzle olive oil and sauté onions & garlic until soft. Turn off heat, add butternut squash, tomatoes, & Burrata. Drizzle with olive oil, salt & pepper. Add to oven for 20-30 minutes. Purée and add hot pasta & pasta water. Enjoy!
