Chimichurri Pesto Roasted Brussels


Ingredients

~Bunch of basil

~Bunch of cilantro

~Bunch of parsley

~1 lemon, juiced

~1/4- 1/2 cup olive oil

~Brussel sprouts, chopped

~crumbled feta



  1. Preheat oven to 400 degrees. In a blender add all of your herbs, olive oil, & lemon juice. Blend until good pesto consistency.

  2. Chop Brussels and add enough chimichurri pesto until Brussels are throughly coated. Season with salt & pepper.

  3. On a cooking sheet roast brussels for 30 minutes. For 2-5 minutes broil until crispy.

  4. Top with feta & enjoy!
