Lemon Artichoke Chicken

Serves 2
4 organic boneless chicken thighs
10-ounce organic artichoke hearts, drained
6 tablespoons organic extra-virgin olive oil
1 organic lemon
1 tsp dried oregano
4 organic garlic cloves, minced
salt & pepper
- In a large bowl, whisk 2 tablespoons of olive oil, juice of the lemon, garlic & oregano. Add chicken to marinade, toss to coat. Marinate anywhere between 10 minutes to overnight. 
- Coat 2 tablespoons of olive oil in a dutch oven or skillet over medium high heat. Season chicken with salt & pepper and add chicken in a single layer. Pour remaining marinade on top and sear chicken for about 10 minutes, until golden brown. 
- Flip chicken, add artichoke hearts, and drizzle 2 tablespoons of olive oil. Cook for additional 7-10 minutes, uncovered, until chicken is cooked through & artichokes are caramelized. 
- Enjoy! I enjoy this chicken on top of some pesto pasta!
