Tuscan Salmon

Ingredients

  • 3 salmon filets

  • 2 Tbsp. olive oil

  • 5 cloves garlic, chopped

  • ½ onion, chopped

  • ⅓ cup of vegetable or chicken broth

  • 5 oz. sundried tomatoes

  • ⅓ cup of dairy free cream

  • 3 cups baby spinach

  • ¼ cup shredded parmesan

  • 1 Tbsp. parsley, chopped

  • Garlic salt & pepper

Preparation

  1. Heat olive oil in pan over medium-high heat. Season salmon with garlic salt & pepper. Sear salmon in hot pan for 3-5 minutes on each side.

  2. Once cooked, remove salmon. In same pan add olive oil, garlic, & onion. Saute on medium-low heat until soft 3-5 minutes.

  3. Add sun-dried tomatoes and saute for 3-5 minutes.

  4. Pour in broth & allow sauce to reduce down.

  5. Durn heat to low and add cream and bring to a gentle simmer.

  6. Add baby spinach & allow to wilt down, then add parmesan cheese.

  7. Add salmon back to pan & sprinkle with parsley. Enjoy!
