Tuscan Salmon

Ingredients
3 salmon filets
2 Tbsp. olive oil
5 cloves garlic, chopped
½ onion, chopped
⅓ cup of vegetable or chicken broth
5 oz. sundried tomatoes
⅓ cup of dairy free cream
3 cups baby spinach
¼ cup shredded parmesan
1 Tbsp. parsley, chopped
Garlic salt & pepper
Preparation
Heat olive oil in pan over medium-high heat. Season salmon with garlic salt & pepper. Sear salmon in hot pan for 3-5 minutes on each side.
Once cooked, remove salmon. In same pan add olive oil, garlic, & onion. Saute on medium-low heat until soft 3-5 minutes.
Add sun-dried tomatoes and saute for 3-5 minutes.
Pour in broth & allow sauce to reduce down.
Durn heat to low and add cream and bring to a gentle simmer.
Add baby spinach & allow to wilt down, then add parmesan cheese.
Add salmon back to pan & sprinkle with parsley. Enjoy!
