Veggie Feta Pasta

1 lb of your favorite pasta
6 oz block of feta
6 oz cherry tomatoes
1 zucchini, sliced
1 shallot, diced
1 yellow pepper, diced
3 cloves garlic, minced
Olive oil
Add all ingredients except pasta to a Dutch oven or casserole dish & bake for 35 minutes at 425 degrees. Add cooked pasta with pasta water as needed. Garnish with your favorite herbs!
