Veggie Pesto Pasta

Ingredients

  • 1 lb, organic Bucatini (or your fav pasta!)

  • ½ cup pesto

  • 1 lb. ground hot italian chicken sausage

  • 6 oz baby kale

  • 10 oz shaved brussel sprouts

  • ½ onion, chopped

Preparation

  1. Boil water & cook pasta accordingly.

  2. Preheat oven to high broil setting. On a cookie sheet add brussel sprouts and drizzle with olive oil, garlic salt, and pepper. Broil brussel sprouts for 3-5 minutes, until perfectly crisp!

  3. In a pan, saute onions until soft. Add ground chicken sausage to same pan, breaking up into tiny pieces.

  4. Once the chicken is browned add pesto & mix until thoroughly coated. Add baby ale, allow to wilt.

  5. Add pasta to pesto mixture. Add pasta water if needed.

  6. Plate the pasta and top with crispy brussel sprouts & parm. Mangia!
